What are simply called "mushrooms" in America are known by their French name "champions" in Russia. Commercially grown mushrooms were available only as a luxury before the 1917 Revolution and became virtually impossible to obtain thereafter. Our Champions have a wonderfully pleasant smell, sweet taste and make an excellent hors d'oeuvre or Zakuski.
