In pre-Revolutionary Russia, the Volga and other rivers through out Russia and Siberia teemed with Sturgeon and to this day Russians consider the sturgeon to be the czar of all fish in consistency and flavor. Its flesh is tender yet firm and the boneless fillets are of generous size, and the taste is exquisite.
