 Description
  This salad is the creation of a French chef, M. Olivier, who in the 1860s opened a fashionable restaurant in Moscow called The Hermitage. The present-day version has veered quite far from the original, but Salad Olivier continues to be a favorite hors d'oeuvre and side dish for entrees.

 Method

Salad Olivier  Serves 8-10 as an appetizer or 6 as an entree
Cut the cooked chicken and potatoes into 1/2-inch cubes. Peel the cucumbers and also cut into 1/2-inch cubes. In a large bowl, combine the meat, potatoes, cucumbers, green peas, and onion. Add the mayonnaise and mix gently, so those ingredients are not mashed.

Refrigerate the salad until serving time (but for no longer than 4 hours).

Variation: Vegetable Salad Olivier
Omit the chicken or veal to make a delicious meatless side dish.

Carrot Salad  Serves 6

Peel and grate the carrots and apples. In a bowl combine them with the remaining ingredients except walnuts for garnish. Chill and serve decorated with the apple slices and walnuts.

  Potato pirozhki with tender meat filling, they were a dream of foreign guests in Russian even in 17th century.

 Method

  Peel big potatoes and grate them finely, squeeze the juice, add an egg, salt and some flour and knead dough. Shape small pies and put inside the filling made from mincemeat, onion, pepper and sour cream. Roll the pies in flour, then in a beaten egg and breadcrumbs. Fry in oil until golden. Put in pan, pour over sour cream and cover. Put in a preheated oven for 20 minutes.

Chicken Roll  Make a cut in the back and Detach chicken fillet from bones. Be careful not to break the surface. Put evenly on the table, salt, pepper and sprinkle with lemon juice. Roll very tightly and put in foil greased with oil. Bake in the oven heated 180-200C. Serve sliced.

 Orange Jelly

 Description
  elly is delicious dessert for any occasion. Jelly si very refreshing and light to taste, so it will be a wonderful completion of your dinner.

 Method

Orange Jelly  Pour over gelatin cold boiled water (1 part gelatin: 9 parts water). Leave for 40-60 minutes and then warm up on a very low heat, don't bring to boil. Strain carefully. Peel orange, chop finely oranges, sprinkle with sugar and leave for a half an hour aside. Put the rest of sugar in the pan, pour over 1 1/2 cup water and bring to boil. Add gelatin to syrup and orange peel finely chopped .Stirring syrup regularly with a spoon, bring to boil on low heat and add orange juice. Strain syrup, cool down and pour half into moulds. Let congeal, then put orange slices and pour another half over.

Funny cookies  Cook dense syrup from water and sugar. Whip whites, add powdered sugar and, stirring constantly, pour in hot syrup and stir until cool. Make a cone from oiled paper. Grease a baking sheet with butter and squeeze from the cone different figurines, letters, stars, hearts and other. Bake in a warm oven just to dry. Take the cookies out for few minutes and put back in the oven for 5 minutes.

  Pachlava is a kind of cookies with nuts and honey. Really delicious.

Pachlava (Baklava)  Chop butter and flour with a knife, make a hole and pour in sour cream, yolks, baking powder, salt and vanilla. Knead dough and divide it into 3 parts. Roll out 1 dough part into a sheet and spread 1/2 filling. Roll the second part and cover, spread the rest of filling and top with the third part of dough. Brush with 2 beaten yolks and cut out rhombuses. Bake until light golden. 10 minutes before taking out, pour over melted honey. Cool down and cut into portions.
