 Description

I have never seen Russian party without this salad. If you go to Russia and would be lucky to get invited to Russian party you sure would see this dish on the table. For Russians it''''''''s as traditional as turkey at Thanksgiving table for American family! And it''''''''s so delicious! 
 Method
Cut all the vegetables in small cubes. Add green peas. Cut eggs in little cubes, add. Cut your choice of meat, ham, turkey or mushrooms (for vegetarian version) in small cubes and add to the egg & vegetable mixture. If you like sea food you can use smoked white fish instead of meat. To make Russian mayonnaise dressing: Use Real mayonnaise combine it with vinigar and about 2-3 tspn of dijon mustard, mix well until becomes smooth and more liquid when Real mayo. If you desire to decorate the salad, you can boil 3-4 eggs, separate egg yolks. Form the salad as a rounded cone (like hill) on the dish. Shred all the egg yolks using very fine shredder on top of the "hill". You can also try to make some flowers from the top part of egg whites and put them on top, so the salad looks like a yellow hill with white flowers on the top! Use your fantasy to create even more beautiful designs! Enjoy!

 Ingredients
  • 4 large potatoes, boiled                    .
  • 1 small red onion  .
  • one jar of dill pickles (about 5 med. to large pickles )   .
  • 2 medium carrots, boiled.
  • 3 eggs, boiled .
  • 1 can of green peas          .
  • ham, smoked turkey breast, smoked pork chops or mushrooms to taste.                           .
  • Russian mayonaise dressing.

     Good recipe
     I would not recommend to add any smoked meats. Just add some cooked and then diced chicken breast. Also add some mashed garlic (about 1 clove), chopped parsley/dill into your mayo sauce. Another tip... Do not add mayo to all of your salad right away if you make more than you can eat. Add mayo right before you serve it. The recipe was very good.

     There is a name for this salad
     Its called Olivie (after Olivie DeBef, the french cook who came up with the recipe). Also, just cooked chicken breast works great. You can try it without carrots and use SOUR pickles... No party in our family is ever without this salad!!!
