 Potato Knishes

 Description
Knishes are thick patties, as of mashed potatoes or chopped beef, and fried or baked.
 Method
In medium sized bowl, combine mashed potatoes with eggs, margarine, salt, pepper, and matzah meal. Sautee a diced onion until brown and add to mixture. Form into walnut sized balls. Brush with a beaten egg yolk. Place on a well-greased baking sheet and bake in a preheated oven for 20 minutes or until well browned.

 Ingredients
  • 3 c mashed potatoes.
  • 2 ea eggs, slightly beaten.
  • 2 tb margarine.
  • 1 ts. salt.
  • black pepper.
  • 1/3 c matzah meal.
  • 1 ea egg yolk beaten with 1 tb water.
  • oil for baking sheet.
  • 1 ea onion.
