 Fresh Mushrooms in Sour Cream

 Description
Mushrooms have always been a regular part of Russian cooking and are often substituted for meat. Mushroom picking in the forest is a frequent family outing.
 Method
Saute mushrooms and onions in butter and lemon juice for 4 minutes. Stir in flour. Cook slowly, stirring 1 minute. Add sour cream, dill, salt, and pepper. Cook and stir 10 minutes. Serve warm on toast.

 Ingredients
  • 450 g fresh mushrooms sliced.
  • 2/3 c spring onions chopped.
  • 2 tb butter.
  • 1 tb lemon juice.
  • 1 tb flour.
  • 1 c dairy sour cream.
  • 2 tb dill chopped.
  • salt.
  • pepper.
  • Small rounds of rye toast.
