 Description
Pelmeni, a sort of little boiled pasties, is favorite Russian food. It's a kind of snack (you can buy them in the shops, but it's nothing comparing to home-made version). As Pelmeni are kept frozen very well longtime and you can cook them quickly.
 Method
Grind beef and pork twice in meat chopper. Then add chopped onion, salt,pepper. To make mincemeat more tender and juicy, add a bit of milk. Reserve. Mix flour with eggs and milk, salt and oil until a soft dough forms. Knead on floured surface until dough is elastic. Take some dough and make a "sausage" (1 inch in diameter). Divide into pieces (1 inch thick). Roll each piece into a circle close to the size (a little bit larger ) of the mold holes so that it is 1/16 inch thick. Place a dough sheet on the dumplings mold, then the filling in every opening, then cover with another dough sheet. After that roll the dough circle with a rolling-pin and you have a two dozens of pelmeni at a time! Use the rest of the dough that comes out from the mold to roll another circle.

Pelmeni can be frozen to be cooked later ( you can keep them in the freezer for a long time), or cooked immediately. To cook pelmeni, boil much water, so that they cannot stick to each other. Salt water. Carefully drop pelmeni into boiling water. Dont forget TO stir them
from time to time. Boil for 20 minutes. Pelmeni can be served with butter, sour cream, vinegar or ketchup.

  • 1 tb vegetable oil.
  • 3 ea eggs.
  • 250 g beef.
  • 250 g pork.

     I'm born in Australia, my parents are White Russian from China. My Grandparents left Moscow in 1917. We love Pelmeni! Your recipe is similar to ours, we prefer Russian but Chinese version has diced chinese cabbage added. Best served with soya sauce, hot mustard, pickles and vodka.

     Good Stuff
     My wife (Natasha) is the daughter of white russian immigrants from China and Serbia, and we often have pilmeni on the menu when we visit - this recipe is very much the same as Nina (Nat's mom, from China) makes it. One trick Nat&I have is to use the boiled salt water to make soup after the Pilmeni have been boiled - generally by stirring in some tomato paste and then adding whatever is handy. You can even put some pilmeni back in to jazz it up. Love this site!!

     I have to admit that on a trip to ST Petersburh I was wary of trying rusian food . Luckily my friend persuaded me to try a bowl on pelmeny & it was the best dam dish i think i have ever eaten .

     This is wonderful. My grandparents were from Russia and I can remember making pelmeni as a child. My grandmother would stock our freezer when they came to visit us in las Vegas. They are also good when cooked in chicken stock

     PeeWees aka pelmeni
     my greatgrandmother whom was russian along with the rest who came over in the 1900's whould make me peewees(that is what i called them) i have just now learned the trade secret. We love to eat them with Vinager and Soysauce, These make a great warm you up in the winter time. My daughters are now learning the masters arts of russian cooking.

     try this sauce!
     I love pelmeni and with this sauce it is out of this world! Take fresh tomatoes, dill pickles and garlic and grate them together in a bowl. Mix it all up and serve it with pelmeni. Add some vodka and we're talking partytime!

     У нас в семье делают только домашние пельмени, в магазинах не покупают, хотя выбор большой, потому, что домашнее - всегда вкуснее. Пельмени делают сразу много (штук по 500) привлекают к этому всю семью (а нас четверо). Тесто делают просто: 3 стакана муки, полстакана ледяной воды, 1 яйцо, соль по вкусу. замешивают эластичное тесто - критерий готового теста: оно блестящее на вид, однородное и не липнет к читстым рукам. Далле тесто кладут в целован и убирают в холодильник на 30 минут.

     nothing beats real pelmeni
     my wife and family are from russia and she has got me hooked on these things . we sit around for hours making hundreds of these little delights. i eat them loaded up with ketchup,sour cream, butter, and hot sauce . i like to boil them with a few cloves also.
