 Roasted Red Peppers Stuffed With Feta

 Description
The combination of red peppers with a zesty feta, butter, and garlic
mixture is unfailingly delicious.
 Method
Preheat the broiler. Broil the peppers on a baking sheet, 2 inches from the heat, turning several times until the peppers are softened, about 20 minutes. Wrap the peppers in a clean linen towel and let steam for 5 minutes. Keeping peppers whole, peel of the skins. Combine the remaining ingredients except the oil in a food processor and process until smooth. Stuff the peppers with the feta mixture as compactly as you can. Arrange on a serving platter, drizzle with the olive oil and refrigerate for at least 1
hour before serving.

 Ingredients
  • 6 large red bell peppers, cored, seeded, and deribbed.
  • 1/2 pound feta cheese, crumbled into pieces.
  • 120 g cottage cheese of room temperature.
  • 6 tb unsalted butter at room temperature.
  • 4 ounces cream cheese at room temperature.
  • 2 tb chopped fresh parsley.
  • 1/2 c finely chopped walnuts.
  • 1 tb olive oil.
