 Russian Fries
 Description
Russian Fries is the most popular dish in everyday life, as you can't imagine the Russians without a potato. For many people, it is as important as bread.
 Method
Peel and rinse the potatoes, and cut it in half lengthwise. Cut crosswise into scant 1/4-inch slices. Blot them dry with a towel.
Melt the butter in 2 large heavy skillets (preferably nonstick). When it bubbles, add the potatoes and spread in a single layer. Saut? over moderate heat for 5-6 minutes, or until the slices are golden on the bottom. Take care that the slices do not stick together or to the bottom of the pan, and that the butter does not burn. With a spatula turn the slices and saut? for another 4-5 minutes on the other side, then sprinkle lightly with salt. Turn the potatoes again, sprinkle with salt, lower the heat, and combine to cook for about 10 minutes more, or until the slices can be pierced easily with a knife.
Sprinkle with the chopped dill and served immediately.

 Ingredients
  • 6 medium boiling potatoes.
  • 4 tablespoons unsalted butter or oil.
  • Salt to taste.
  • 1 tablespoon finely chopped fresh dill or parsley.
